Food should be both nourishing and delicious! This vegetarian recipe offers both qualities in full!

Dressing:

  • 2 T diced shallot
  • 1/4 cup red-wine vinegar
  • 1 T + 1 tsp Dijon mustard
  • 1/2 tsp. fine sea salt
  • 1/4 tsp finely ground black pepper
  • 1/4 cup + 2 T extra virgin olive oil

Salad:

  • Grilled Tofu
  • 1 cup of Coconut Bacon
  • 4 large eggs
  • 1 head of romaine lettuce, washed and chopped coarsely
  • 1 cup of cherry tomatoes, stemmed and chopped
  • 2 avocadoes peeled, pitted, and sliced
  • 2 ounces blue cheese or goat cheese (OR vegan cheese of choice)
  • 2 T finely chopped chives
  • Salt and black pepper to taste

Instructions:

  • In a small blender, combine the shallot, vinegar, mustard, salt, pepper, and olive oil.
  • Blend until the mixture emulsifies (it becomes smooth, homogenous, and a thicker consistency).
  • Taste and adjust the seasoning according to your tastes, then set aside!
  • Hard-boil the eggs according to your preference.
  • Toss the lettuce with a little big of dressing to coat the leaves, and arrange in your serving dish of choice.
  • Top with coconut bacon, eggs, tomatoes, avocados, and grilled tofu.
  • Garnish with cheese, chives, another drizzle of dressing, salt, and pepper
