This roasted carrots with Tahini makes for the perfect sweet and savory side dish that everyone will enjoy. Not only is it good for you, it is also extremely flavorful! You can make it for an appetizer, a side dish or for a little midday snack!

 

PREP TIME:  10 minutes
TOTAL TIME: 25-45  minutes (Depending on how well you like them done)

Serves: 3-4

INGREDIENTS

 

  • One bunch carrots 
  • Avocado Oil 
  • Tahini 
  • Lemon Juice 
  • Red wine vinegar 
  • Salt 
  • Olive oil 

DIRECTIONS

 

  1. Preheat the oven to 425º
  2. Cut the carrots in half lengthwise and lay them on a baking sheet.
  3. Drizzle the oil over them and toss to coat.
  4. Roast 25-30 minutes or until browned and tender.
  5. While the carrots are roasting, combine all the sauce ingredients in a small bowl and mix well.
  6. Drizzle the sauce over the roasted carrots and enjoy!
